Self-Catering at it’s Best: Wood-Fired Pizza Night

Communal cooking at our retreat is all part of the glamping experience and, honestly, what could be better than the sweet smell of freshly baked pizza filling the night air? Our on site wood-fired pizza oven is always available, so you get to enjoy your very own pizza creation under the stars. We provide the essentials – pizza base and tomato sauce – and the rest is up to your own imagination. Pizza is a crowd pleaser, for oldies and young ones alike, and after all that daytime exploration, it’s the best way to refuel. Here are a couple of recipes to (wood) fire up the imagination.

For the meat lovers: Smoked Ham, Mushroom and Sage

Treat yourself to some quality ham for this one, prosciutto is always a great choice. Sage is a fragrant, tasty herb well used in Italian cooking.


Ingredients: 50ml (2 fl oz) extra virgin olive oil, for frying, plus 1 tablespoon for drizzling, 12 large fresh sage leaves, 100g (3.5oz) mozzarella cheese, 90g (3.5oz) good quality ham, 90g (3.5oz) thinly sliced button or small cap mushrooms, sea salt and freshly ground black pepper.

Grab yourself a base and spread with a good covering of tomato sauce, leaving about 3-4cm between the sauce and the edge of the base. Next, heat up some of the olive oil in a small pan and fry the sage leaves until crisp. Take them out of the pan and drain on a paper towel. Slice the mozzarella as thinly (or as thick) as you like and scatter over the tomato. Next add the sliced ham and mushrooms along with a good pinch of salt and pepper. Pop in the wood-fired oven for 3-5 minutes – the pizza will cook very quickly! Once out of the oven drizzle with a little olive oil, add the crispy sage and it’s ready to serve.


For the veggies: Mozzarella, Cherry Tomatoes, Olives, Baby Rocket & Red Onion

This vegetarian feast is a classic. Tasty and simple, the ingredients are easy to find and it’s incredibly quick to make.


Ingredients: 160g mozzarella cheese, 1 teaspoon dry oregano, 100g baby rocket, large red onion thinly sliced, 25g black olives, 90g cherry tomatoes, sea salt and black pepper.

Prepare the base as before and cover with tomato sauce, being careful to leave space between the sauce and the edge of the base so it doesn’t spill over. Spread all the ingredients, except the rocket, evenly over the base and pop into the oven for 3-5 minutes or just until the cheese is melted and the onion has started to caramelise. Once out of the oven, add the rocket and enjoy!


For the kids or dessert: Nutella and fresh strawberries

This sweet treat is a hit with kids and adults alike! It’s also a tasty breakfast if you can manage to save some from the night before.


Ingredients: 5 tablespoons Nutella, a punnet of strawberries, 1 tablespoon butter or olive oil.

Grab a base but give the tomato sauce a miss. Spread the butter or olive oil evenly over the base and pop it into the oven until the edges start to crisp up. Remove from the oven and, while still warm, smooth the Nutella over the base. Slice up the fresh strawberries and arrange them evenly over the Nutella. Serve and immediately become the most popular person on camp!
